1 tablespoon lemon juice
1 cup sugar
1 teaspoon of water
1-14 ounce can sweetened condensed milk
1-12 ounce can evaporated milk
1 teaspoon vanilla extract
Preheat oven to 375 degrees F.
In a small bowl mix sugar, water, and lemon juice with a fork until the sugar is moist and coated.
Place bowl in the microwave for 3-5 minutes until a dark caramel is created.
Meanwhile in a medium size bowl mix eggs, condensed milk, evaporated milk, and vanilla on high for 2-3 minutes.
Pour the dark caramel from the microwave into a round 9-inch pan and move the pan around so that the caramel coats the bottom.
Pour the liquid mixture slowly into the pan on top of the caramel.
Bake for 30-35 minutes until the top is golden brown and the flan is firm but still jiggles slightly in the middle.
Cool for an hour and then refrigerate for a few hours prior to serving.
