1 fresh cornish game hen
1 small onion, quartered
3 small potatoes, quartered
16 broccoli florets
Rinse hen thoroughly and pat dry.
Place hen breast up in 1-½ qt. covered casserole and cover.
Place casserole on black tray in oven.
Dial speedcook for chicken, whole, 2-3 pounds, 40 minutes, U-low, L-low, and push Start.
Pause/Off when 15 minutes are left and remove casserole.
Add vegetables to the pot around the hen.
Return casserole to oven and push Start.
When done, remove from oven, and wait 5 minutes before serving.
Squeeze lemon juice on vegetables to enhance flavor.
We don't eat the skin and like the natural flavor of the hen. This timing produces a very moist, flavorful dinner. If you want a crisp, browned skin, increase the U setting to medium.
