1 ½ cups sliced fresh mushrooms
1 cup chopped tomatoes
¼ cup chopped onion
¼ cup chopped green pepper
2 tablespoons snipped fresh parsley
2 teaspoons grated lemon zest
¾ teaspoon oregano
½ teaspoon seasoned salt
¼ teaspoon garlic powder
2 tablespoons olive oil
4 (6-oz.) fresh cod fillets
Salt and pepper to taste
Cook mushrooms, tomatoes, onion, green pepper, parsley, lemon zest, oregano, seasoned salt and garlic powder in olive oil until onion is tender.
Place fish in a 2-quart oblong or 8-inch square baking dish; sprinkle with salt and pepper.
Spoon tomato mixture over fish.
Cook according to your Advantium model's cooking settings or until fish flakes easily when tested with a fork.
