Anything on a skewer is more fun to eat - and dip too!
4 ounces cheese tortellini
1 tablespoon red wine vinegar
2 tablespoons olive oil
1 clove of garlic, smashed
Salt and fresh ground black pepper to taste
1/2 cup grape tomatoes
1/2 cup medium pitted black olives
1/2 cup pepperoncini peppers
1 cup small mozzarella balls
Marinara sauce for dipping, if preferred
Cook the tortellini according to package directions. Drain and rinse the pasta under cold water to stop cooking.
While pasta cooks, mix the vinegar, olive oil and smashed garlic in a medium bowl. Season with salt and pepper to taste, and toss with the tomatoes, olives, mozzarella, pepperoncini and cooked pasta.
Skewer items, alternating according to preference.
