Cold Asparagus salad
Ingredients:
1 bunch asparagus
2 hard-boiled eggs, shredded
Lemon vinaigrette
3 Tbps extra virgin olive oil
1 tablespoon fresh lemon juice
1/4 teaspoon lemon zest
1/2 teaspoon dijon mustard
3 tablespoons chives (or any other favorite herb)
1 teaspoon balsamic vinegar
Mix all together and let the flavors blend together
Method:
Arrange asparagus on a nice serving dish. Sprinkle with shredded egg and drizzle vinaigrette over the salad. Serve cold.
