Lima Bean Dip
Ingredients:
20 oz. Frozen Baby Lima Beans
1 Lemon
1/4 Cup fresh parsley
2 Cloves Garlic
Dash of salt
1/4 cup Olive Oil
Method:
Bring a pot of salted water to a rolling boil, add Lima beans and reduce to a simmer, smash cloves of garlic with the side of your knife and drop into boiling water with the Lima beans and let simmer for 15 minutes.
While cooking add lemon juice, a 1/4 tsp. lemon zest, dash of salt and parsley to a food processor.
Drain and rinse beans in a colander to remove salt and cool slightly. Combine with the rest of the ingredients and begin to process, while the processor is running add olive oil until desired consistency is reached.
