Crispy Apple Crisp
Ingredients:
Filling
Nonstick cooking spray for the pan
1 cup no-calorie sweetener, granulated
1 teaspoon ground cinnamon
1-1/2 teaspoon orange zest
1/4 cup orange juice
5 Golden Delicious apples, peeled, cored, cut into 1/2-inch thick slices
Topping
1 cup old-fashioned rolled oats
2-1/2 tablespoons no-calorie sweetener, granulated
1/4 teaspoon ground cinnamon
2 tablespoons unsalted butter, diced
1/2 cup crisp rice cereal
1/2 cup chopped walnuts
Method:
Position a rack in the center of the oven and preheat to 350 degrees F. Lightly spray the inside of an 8-inch square baking dish with the cooking spray
To make the filling, whisk together the granulated sweetener, cinnamon, orange zest, and orange juice in a large bowl. Add the apples and toss gently. Spread into the baking dish
To make the topping, mix the oats, granulated sweetener, and cinnamon in a medium bowl. Add the butter. Using a pastry blender or two knives, cut the butter into the dry ingredients until the mixture is crumbly. Stir in the cereal and walnuts. Scatter over the apples
Bake until the apples are tender and the topping is lightly browned, about 45 minutes. Let cool for 5 minutes, then cut into squares and serve warm
