2/3 cup shredded Monterrey Jack or cheddar cheese
4 (6 - 7 inch) whole grain tortillas
Dash of salt and pepper
1 teaspoon butter or margarine or non-stick cooking spray
1 tablespoon real bacon bits
1/3 cup chunky salsa
Preheat oven to 300 degrees F. Wrap tortillas completely with foil and place in oven for about 10 minutes.
Beat eggs and add salt and pepper, if desired. Melt butter in a skillet or spray with non-stick cooking spray. Add eggs and scramble until fluffy. Remove from heat and stir in bacon bits.
Take each tortilla and place about 1/4 of the eggs on each. Top with 2 tablespoons of the cheese and about 1 1/2 tablespoons of the salsa. Serve topped with extra cheese and salsa if desired.
