6 Half-Pint Jars
1 quart pitted and chopped sweet cherries
1 package powdered pectin
1/4 cup lemon juice
1 teaspoon almond extract
3/4 teaspoon cinnamon
1/4 teaspoon ground cloves
5 cups sugar
Combine all ingredients, except sugar in a large pot or Dutch oven - type pan.
Bring to a boil while stirring constantly. Add sugar and stir until dissolved.
Bring to a boil and let cook for 2 minutes, stirring constantly.
Remove from heat and skim off any foam.
Ladle into hot half-pint jars, leaving 1/4 inch headspace.
Adjust two-piece caps.
Place in a boiling-water bath canner and process 10 minutes.
