Cousin Edna's Cabbage Rolls
Ingredients:
8 whole, fresh cabbage leaves
1/2 cup water
1 pound ground beef chuck, or leaner
1/2 cup instant rice
3 tablespoon onion, finely chopped
3 tablespoons green bell pepper, finely chopped
1 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon nutmeg
1/2 cup tomato juice
1 (15 ounce) can tomato sauce
3 tablespoons brown sugar, firmly packed
1 tablespoon lemon juice
1 tablespoon Worcestershire sauce
1/2 teaspoon garlic salt
Method:
In a 3-quart casserole, place cabbage leaves and water and cover
Place in a microwave oven at high power for about 7 minutes, then drain
In a medium size bowl, combine ground beef, rice, onion, green pepper, salt, pepper, and nutmeg
Divide into 8 portions and place one on each of the 8 cabbage leaves
Roll leaf around meat mixture and secure with a toothpick
Place rolls, seam side down in slow cooker
Combine tomato juice, tomato sauce, brown sugar, lemon juice, Worcestershire sauce and garlic salt
Pour over cabbage rolls
Cover and cook on low for 7 to 9 hours
