1 box yellow cake mix
8 tablespoons (1 stick) unsalted butter, softened
1 8 ounce package of cream cheese, softened
2 cups, cooked mashed pumpkin or 1 15 ounce can
8 tablespoons (1 stick) unsalted butter, melted
1 teaspoon vanilla
1 teaspoon cinnamon
1 16 ounce box of confectioner's sugar
1 teaspoon nutmeg
Preheat oven to 350 degrees F.
Lightly grease a 9 x 13-inch or similar size pan.
Mix cake mix, egg and butter well with a mixer at medium speed.
Press mixture into bottom of pan.
In a large bowl, beat cream cheese and pumpkin until smooth.
Add eggs, butter and vanilla and beat together again.
Add cinnamon, confectioner's sugar and nutmeg and mix well.
Spread pumpkin mixture over cake batter.
Bake for 40 to 50 minutes - center should still appear moist.
Serve with fresh whipped cream, if desired.
