Potato Green Bean Salad
Ingredients:
1-1/2 pounds red potatoes
1/2 pound green beans, trimmed and cut into 2 inch lengths
1/2 cup chopped walnuts or pecans
1 green onion, chopped
1/3 cup chopped fresh parsley
1-cup mayonnaise (more if desired)
Salt and pepper to taste
Iceberg, red or romaine lettuce leaves
Method:
Cook unpeeled potatoes for about 15 minutes until tender.
Drain and set aside.
Cook green beans in boiling water for about 5 minutes until bright green.
Drain, rinse with cold water and set aside.
Slice or cube potatoes into desired pieces and place in a large bowl.
Add green beans, nuts, green onion and parsley and toss gently.
Start with adding about3/4cup mayonnaise.
Add more mayonnaise as desired and season with salt and pepper.
Serve on lettuce leaves.
