Pecan Crisp Acorn Squash
Ingredients:
2 acorn squash (approximately 1 pound each), halved, seeds removed
2/3 cup butter-cracker crumbs
1/3 cup chopped pecans
1/3 cup butter, melted
3 tablespoons brown sugar, packed
1/2 teaspoon salt
1/4 teaspoon cinnamon or nutmeg
Method:
Place prepared squash halves cut side down in a 12 x 8 x 2-inch oblong microwave-safe or equivalent dish, and cover with wax paper.
Microwave on high for 6 minutes.
During this time, mix the remaining ingredients.
Turn squash halves cut side up and fill with pecan / cracker mixture.
Re-cover with wax paper and microwave on high for 6 to 8 more minutes.
Remove wax paper and let stand 5 minutes before serving.
Chef's Notes:
Squash is easy to cut into halves if microwaved 1 to 2 minutes at High. Let stand a few minutes before cutting.
Recipe may be doubled for a party.
Microwave squash in 13x9x2 dish, cut side down, about 10 minutes.
Turn over and fill. Recover. Finish microwaving 9 to 12 minutes more.
