1/3 cup butter or margarine
3/4 cup granulated sugar
1/4 cup buttermilk
1 banana, mashed
1/2 cup drained crushed pineapple
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 cup bran flakes
1 cup toasted almond slices
1 cup diced, dried apricots
Preheat oven to 350 degrees F.
Generously grease a standard loaf pan or spray with non-stick cooking spray.
Cream together butter or margarine and sugar until light and fluffy.
Add egg, buttermilk, mashed banana and crushed pineapple.
Combine flour, baking soda, baking powder and salt in a small bowl.
Add to liquid ingredients and mix well.
Stir in bran flakes, almonds and apricots.
Turn into loaf pan and bake for 45 minutes.
Let sit in pan for 15 minutes before turning out onto a rack to cool.
