Blue Cheese Coleslaw
Ingredients:
1/4 cup apple cider vinegar
2 tablespoons chopped onion
2 tablespoons sugar
1 teaspoon celery seed
1/4 teaspoon salt
1/4 teaspoon dry mustard
1/4 teaspoon pepper
2 cloves garlic, minced
1/4 cup vegetable oil
1 medium head cabbage, shredded
1/2 cup crumbled blue cheese
Method:
Combine vinegar, onion, sugar, celery seed, salt, mustard, pepper and garlic in a bowl. With a whisk, add oil slowly until mixture is well blended.
In another bowl combine cabbage and blue cheese crumbles. Cover both and chill for at least 1 hour.
Pour vinegar mixture over cabbage and toss.
