Pineapple Glazed Shrimp
Ingredients:
12 jumbo shrimp, peeled and deveined
Segments of 1 lime, 1 orange and 1 grapefruit
1 jalapeno, minced
1 papaya, skinned, seeded and sliced
1 carambola (star fruit), sliced
2 tablespoons cilantro
3 ounces pineapple juice
Extra virgin olive oil for sauté
Sea salt and cracked black pepper
1 tablespoon whole butter
Method:
Preheat a nonstick pan on the cooktop to medium high heat.
Sear shrimp in the nonstick pan for 2 minutes on each side. Season with sea salt.
Add jalapeno, papaya, carambola (star fruit) and cilantro. Toss in pan.
Add pineapple juice and citrus segments. Reduce by half.
Add the butter and mix to create the sauce. Season to taste with sea salt and cracked black pepper.
To plate, arrange three shrimp per plate, and drizzle sauce around the shrimp.
