How many times have we had new cooks come with a dish they’ve prepared as a special for the evening for us to taste? How many times have we asked if they’ve tasted it and been told, “no chef?” In training we tell our guests: “OK, so we’ve prepped and portioned the ingredients for you. We’ve guided you though the cooking process. We’ve given you the recipe. It’s done, right? Nope. Not until you taste it.” You are the last line of defense before it hits the table. This is the last chance you have at making adjustments or throwing it out if it’s a disaster. Don’t miss this opportunity. It’s the last step and one of the most important in becoming a better cook.
