A simple recipe that features a classic spring ingredient, carrots, in a flavorful new way.
12 rainbow carrots (Or regular whole carrots as well)
1/4 cup extra virgin olive oil
1 tablespoon ginger, grated
2 tablespoons honey
Salt and pepper to taste
Preheat oven to 400 degrees F.
Peel carrots and arrange on a baking sheet lined with foil or parchment paper.
Mix olive oil, ginger and honey. Spread on carrots evenly and sprinkle with salt and pepper.
Roast in oven for 30 - 45 minutes until softened on the inside and golden on the outside. Turn carrots halfway through cooking.
