Benedictine on my biscuit is magnificent! Heck, Benedictine on anything is awesome. What is Benedictine in Kentucky? Well, it can mean the liquor that many of us know about. In Kentucky we also know it as a cucumber spread made famous by Jennie Benedict. It goes way back... If you are old enough you might remember putting on your "finest" for tea and Benedictine sandwiches. My mother fondly talks about wearing white gloves as a little girl and her first experiences enjoying Benedictine sandwiches. She loves it so much that she makes it for my kids all summer long. This is a lady that doesn't like cooking at all. It's the kind of dish that everyone is measured by. It has enhanced every chef in the region.
