Roasted Baby Eggplant (Advantium)

Ingredients:

6 baby eggplants, halved (or use 1 medium eggplant, cut into 1-inch thick slices)

1 to 2 tablespoons olive oil

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper

1 teaspoon dried oregano

1 to 2 tablespoons balsamic vinegar

2 tablespoons thinly sliced fresh basil leaves

4 ounces crumbled goat cheese (optional)

Method:

Place eggplant halves, cut-side-up, on a lightly greased Advantium pan. Drizzle with olive oil, salt, pepper, and oregano. Roast using the "Roasted Mixed Vegetable" setting for your model of GE Advantium oven. Drizzle with balsamic vinegar and sprinkle with basil. Top with goat cheese, if desired.
