Vanilla-Almond Granola with Cranberries

Granola makes a great snack but store bought options can be expensive. Why not make it yourself? The homemade version doesn't have any preservatives and is much easier on your wallet. Plus, it's delicious!

Vanilla-Almond Granola with Cranberries

Ingredients:

1/3 cup maple syrup

1/3 cup packed brown sugar

4 teaspoons vanilla extract

1/2 teaspoon salt

1/2 cup vegetable oil

5 cups old-fashioned rolled oats

2 cups raw almonds, chopped coarse

2 cups dried cranberries (or your favorite dried fruit)

Method:

Preheat oven to 325 degrees F. Line a baking sheet with parchment paper.

In a large bowl, whisk together maple syrup, brown sugar, vanilla and salt. Add the oil and whisk to combine. Fold in oats and almonds and toss until thoroughly coated.

Transfer mixture to the baking sheet and spread into an even layer. Use a spatula to firmly pack the mixture onto the sheet.

Bake for 40 to 45 minutes, until lightly browned. Rotate the pan once, halfway through baking.

Remove granola from oven and cool to room temperature, about 1 hour. Break the cooled granola into big chunks and stir in dried fruit.

Granola can be stored in an airtight container for up to 2 weeks.
