Creamy Goat Cheese Cups

This recipe is simple, elegant, and versatile. Pass them around at a party or serve with a simple salad. They're sure to impress and will disappear quickly.

Creamy Goat Cheese Cups

Ingredients:

5 ounces goat cheese, room temperature

1 egg

1/4 cup mayonnaise

3 tablespoons chives, minced (half a package)

1/2 teaspoon salt

1/2 teaspoon pepper

2 packages fillo cups

Method:

Preheat oven to 350 degrees

Beat goat cheese, mayonnaise and egg with a whisk or electric mixer until creamy. Mix in chives, salt and pepper.

Place fillo cups on a baking sheet. Spoon the cheese mixture into the cups, making sure you don't overfill. Bake for 20 minutes until tops are slightly brown.

Cool 5 minutes before serving. Can be served warm or at room temperature.

Chef's Notes:

The easiest way to mince your chives is with kitchen scissors.

Just snip them into the bowl.
