Christmas Trees on a Stick
This lightly spiced cookie is whimsical and tasty. Decorated simply with melted chocolate it is sure to delight the kids and adults in your life.

2-3 dozen cookies

1 Hour & 30 Minutes
Ingredients:
1 cup butter
1 cup sugar
1 cup dark corn syrup
2 tablespoons cider vinegar
2 eggs, lightly beaten
6 cups all-purpose flour
2 tablespoons pumpkin pie spice
1 teaspoon baking soda
½ teaspoon salt
Method:
Preheat oven to 350 degrees.
Combine butter, sugar, corn syrup and vinegar in a medium sauce pan. Heat to boiling, stirring occasionally. Remove from heat and allow to cool until lukewarm. Add eggs and whisk until combined.
In a large bowl, mix flour, pumpkin pie spice, baking soda and salt. Gradually pour syrup mixture over flour while mixing with a wooden spoon. Continue mixing until a dough forms. Turn dough out onto a clean counter and knead with hands to bring the dough together.
Shape into a ball and wrap in plastic wrap. Chill in refrigerator one hour.
On a lightly floured surface, roll dough to ¼-inch thick. Use cookie cutters to cut shapes. Press lollipop sticks into the backs of the cookies and place onto a baking sheet.
Bake for 10 to 12 minutes, until firm and golden brown. Cool on wire racks.
After cookies are cooled completely, decorate with melted candy wafers and sprinkles.
