Overnight Steel Cut Oats
With 10 minutes of work the night before, you can have delicious steel cut oats in the morning.

Ingredients:
3 cups water
1 cup steel cut oats
1/4 teaspoon salt
1 cup whole milk (or nut milk)
2 tablespoons dark brown sugar
Topping options: fresh berries, dried fruit, bananas, toasted nuts, maple syrup
Method:
The night before, bring 3 cups water to boil in large saucepan over high heat. Remove pan from heat; stir in oats and salt. Cover pan and let sit at room temperature overnight.
In the morning, stir milk and brown sugar into oats and bring to boil over medium-high heat. Reduce heat to medium and cook 4 to 6 minutes, stirring occasionally, until oats are softened. Oats should retain some chew and the thickened mixture should resemble warm pudding.
Adorn with your favorite toppings. Try fresh berries during the spring and summer and chopped apples and maple syrup in the colder months.
Chef's Notes:
Steel cut oats normally take 40 minutes to cook. This recipe cuts that time down drastically by allowing the oats to soak in water overnight. Cooked steel cut oats freeze beautifully. Simply portion them out into individual servings, freeze and then store in an airtight freezer bag for up to 2 months. To reheat, microwave for 2 minutes, stir, and microwave for 2 additional minutes or until hot.
