⅓ cup butter, softened
1 cup sugar, divided
1 cup all-purpose flour
2 eggs, beaten
3 tablespoons all-purpose flour
½ teaspoon baking powder
2 tablespoons fresh lemon juice
1 tablespoon grated lemon zest
In a small mixing bowl, beat butter and ¼ cup sugar until well blended.
Mix in 1 cup flour and salt until mixture is crumbly.
Press mixture onto bottom of an 8-inch square baking dish.
Place dish on non-stick metal tray.
Cook for 7 minutes according to your Advantium model's cooking settings.
Combine remaining sugar, eggs, 3 tablespoons flour, baking powder, lemon juice and lemon zest; spread over crust.
Return dish to oven.
Cook according to your Advantium model's cooking settings or until set.
Cool completely and sprinkle with powdered sugar.
Cut into squares.
After removing the lemon zest, squeeze the lemon for the juice needed in this recipe. The fresh lemon juice gives the squares a superior flavor.
