Sweet Potato Biscuits
Ingredients:
2 cups all-purpose flour
¼ cup sugar
1 tablespoon baking powder
1 teaspoon pumpkin pie spice
¼ teaspoon salt
⅓ cup butter
1 cup drained and mashed cooked
sweet potato
⅓ cup milk
¼ teaspoon vanilla
Melted butter
Sugar
Method:
In mixing bowl, combine flour, sugar, baking powder, pumpkin pie spice and salt.
Cut in butter with a pastry blender or fork until mixture resembles coarse crumbs.
Add sweet potato, milk and vanilla.
Stir just until dough clings together.
On a lightly floured surface, knead dough gently 10 or 12 strokes.
Roll out dough to ½-inch thickness.
Cut with a 2½-inch biscuit cutter, dipping cutter into flour between cuts.
Place biscuits on lightly greased non-stick metal tray.
Cook according to your Advantium model's cooking settings or until golden brown.
Brush tops with melted butter and sprinkle with sugar.
