Peach, Prosciutto and Goat Cheese Flatbread
Sweet, salty and creamy come together to make a gourmet flatbread that is delicious and deceptively simple.

Ingredients:
1 lb refrigerated pizza dough
1 tablespoon olive oil
1 tablespoon chopped fresh thyme leaves
1/2 cup crumbled goat cheese
2 peaches, cut into thin wedges
6 slices prosciutto, torn into pieces
2 tablespoons grated Parmesan cheese
Balsamic glaze
Method:
Preheat oven to 450 degrees F; arrange the rack in the lowest position. Brush a large baking sheet with oil.
Lightly dust a clean work surface with flour. Divide pizza dough in two. Roll out each portion into a 6x10-inch rectangle, about 1/4-inch thick.
Brush pizza dough with olive oil. Scatter thyme and goat cheese over the dough. Top with peaches, prosciutto and Parmesan.
Bake for 12 to 15 minutes or until golden brown. Drizzle with balsamic glaze. Cut each flatbread into 6 pieces.
Chef's Notes:
For an even speedier appetizer, use premade flatbread instead of rolling refrigerated pizza dough. If peaches are out of season try using figs or thinly sliced pears.
