Three Bean Salad with Edamame
Fast, healthy, and surprisingly delicious, this salad is full of bright flavors from lime and cilantro. Even better, it comes together in a flash. Chill the salad a few hours before serving for optimal flavor.

Ingredients:
1 bag frozen shelled edamame
1 can garbanzo beans, drained and rinsed
1 can black beans, drained and rinsed
1 bunch scallions, chopped
1 red pepper, chopped
1 yellow pepper , chopped
1/2 cup cilantro, chopped
2 tablespoons apple cider vinegar
2 tablespoons lime juice
3 tablespoons olive oil
1/4 teaspoon red pepper flakes
1 teaspoon kosher salt
1/2 teaspoon fresh ground pepper
Method:
Drain and rinse beans. Cook edamame for 5 minutes in a microwave safe bowl, covered with plastic wrap. Let cool.
In a smaller bowl combine oil, vinegar, lime juice and salt & pepper.
Combine peppers, green onions, beans, edamame and cilantro. Pour dressing over vegetables and beans and toss well.
Cover and refrigerate for several hours before serving to let favors mingle.
