4 medium tomatoes, diced
1/2 medium red onion, diced
1 clove garlic, minced
1 jalapeno pepper, seeded and minced
1/4 - 1/2 cup cilantro, chopped
1/2 teaspoon salt
Add tomatoes, onion, garlic, jalapeno and cilantro to a bowl and gently mix.
Remove 1/2 cup of mixture, and puree in a food processor or blender.
Add puree back to the remaining mixture, and stir in the juice from the lime and the salt.
For the best flavor, chill in the refrigerator for a few hours or overnight.
Serve with tortilla chips.
