1 pound each of dried beans
Light red kidney beans
Great northern beans
Split green peas
Black eye peas
6 cups water
2 cups diced cooked ham or turkey (optional)
1 large onion, chopped
3 cloves garlic, minced
3 - 10 ounce cans tomatoes with green chilies
2 cups diced ham
1 cup quick-cooking barley
Salt and pepper to taste
To create the soup mix as a festive gift, layer each type of bean in in a mason jar and attach the recipe.
To cook the soup soak bean mixture overnight in water.
Drain and Rinse well.
Place beans, ham or turkey, onion and garlic in a large 5 quart Dutch oven.
Bring to a boil and simmer for about 30 minutes.
Continue cooking on low for 1 hour or longer until beans are tender.
Add barley and cook for an additional 10 minutes.
Season to taste.
