Chef's Notes:

A frittata is an Italian-style omelet that has the ingredients mixed with the eggs rather than folded inside. It is a simple but very welcome lunch or supper dish when served with bread sticks, a crisp salad, fruit sorbet and bakery cookies of your choice.
