Baked Caramel French Toast
Go ahead and sleep in! This delicious breakfast dish is assembled the night before, giving you a dish to pop into the oven for a delicious breakfast or brunch dish without the morning stress.
Ingredients:
14 slices of French bread, about 1-inch thick (from one large or two small loaves)
1/2 cup butter (1 stick)
1 cup brown sugar
3 tablespoons light corn syrup
6 eggs
1 1/2 cups milk
1 tablespoon vanilla
Cinnamon
Method:
Over medium heat, melt butter, brown sugar and corn syrup. Stir until the mixture comes to a boil and cook for 2- 3 minutes until the caramel comes together. Pour the caramel into a 9-inch x 11-inch glass or ceramic dish.
Layer the bread slices over the caramel mixture.
In a medium bowl, mix eggs, milk and vanilla. Pour over the bread. Sprinkle the top with cinnamon and cover with plastic wrap.
Refrigerate overnight.
In the morning, uncover and bake in a 350 degree oven for 45 minutes.
Serve with fresh fruit.
