Cousin Edna's Cabbage Rolls

Ingredients
8 whole, fresh cabbage leaves
1/2 cup water
1 pound ground beef chuck, or leaner
1/2 cup instant rice
3 tablespoon onion, finely chopped
3 tablespoons green bell pepper, finely chopped
1 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon nutmeg
1/2 cup tomato juice
1 (15 ounce) can tomato sauce
3 tablespoons brown sugar, firmly packed
1 tablespoon lemon juice
1 tablespoon Worcestershire sauce
1/2 teaspoon garlic salt
Preparation
- In a 3-quart casserole, place cabbage leaves and water and cover
- Place in a microwave oven at high power for about 7 minutes, then drain
- In a medium size bowl, combine ground beef, rice, onion, green pepper, salt, pepper, and nutmeg
- Divide into 8 portions and place one on each of the 8 cabbage leaves
- Roll leaf around meat mixture and secure with a toothpick
- Place rolls, seam side down in Crock Pot
- Combine tomato juice, tomato sauce, brown sugar, lemon juice, Worcestershire sauce and garlic salt
- Pour over cabbage rolls
- Cover and cook on low for 7 to 9 hours
