Graham Encrusted Yams Recipe

Ingredients

Yams:

2 40 oz cans yams, drained

1 cup butter, melted and divided

1/8 teaspoon cinnamon, ground

1/8 teaspoon cloves, ground

1/8 teaspoon nutmeg

1/8 teaspoon black pepper

1/2 teaspoon salt

Topping:

1 1/3 cups graham crackers, crumbled

1 cup brown sugar

1/4 teaspoon salt

Note:

If preferred, you may substitute 1/2 teaspoon Allspice for cinnamon, cloves, nutmeg and black pepper

Preparation

Fill 2.5 quart casserole dish with yams and heat thoroughly

Mix 1/2 cup butter with spices and 1/2 teaspoon salt and spread over yams

Toss remaining 1/2 cup butter with graham cracker crumbles, brown sugar and 1/4 teaspoon salt

Using a spoon, layer evenly on top of yams

Broil on low until topping browns
