Set and Forget Pot Roast  Recipe

Yield: 4-6 Servings

Ingredients

1 - 3 to 4 pound rump or other beef roast
5 or 6 red potatoes, quartered with skins left on
2 medium onions, quartered
2 cups prepared baby carrots
2 cans tomato soup concentrate - can use fat free
Lemon pepper seasoning

Preparation

  1. Trim excess fat from roast and place in a large crock-pot.
  2. Add meat, potatoes, carrots and onions.
  3. Pour soup over top and sprinkle with some lemon pepper seasoning.
  4. Cook on low setting for 8 hours. Serves 4 to 6.
