Set and Forget Pot Roast Recipe

Ingredients

1 - 3 to 4 pound rump or other beef roast

5 or 6 red potatoes, quartered with skins left on

2 medium onions, quartered

2 cups prepared baby carrots

2 cans tomato soup concentrate - can use fat free

Lemon pepper seasoning

Preparation

Trim excess fat from roast and place in a large slow cooker.

Add meat, potatoes, carrots and onions.

Pour soup over top and sprinkle with some lemon pepper seasoning.

Cook on low setting for 8 hours. Serves 4 to 6.
