Red Eye Gravy Recipe

The traditional way of making red eye gravy is to just cook your country ham then add coffee to the drippings and reduce. Not so good in my opinion. This is our take on a classic.

Red eye gravy is a Southern tradition...try some on a biscuit.


 
 



Ingredients
By Measure
1 Cup Country Ham - Julienned
1/4 Cup Onions - Diced
2 Tbs Butter
1 1/2 Tbs Flour
1 1/2 Cups Chicken Stock
1/2 Cup Coffee
1/2 Cup Cream
Salt & Pepper To Taste

 
 


Preparation

  1. In a sauce pan heat 1 tablespoon of oil over high heat until it begins to smoke
  2. Add the country ham and spread it in a single layer and let it cook without stirring for 2 minutes to let it caramelize
  3. Add the onions and stir
  4. After the onions have cooked for 2 minutes add the butter
  5. When the butter is melted add the flour and stir to make a roux
  6. Let this cook for 1 minute then add the chicken stock
  7. Roux only thickens when liquid boils so let this come to a boil while you keep stirring
  8. Add the coffee and cream and season with salt and pepper
